Dinny White Wine Vinegar
This fine white wine vinegar salutes A. Dinsmoor "Dinny" Webb, a former professor with UC Davis' famous Department of Viticulture and Enology. Identified by his tasteful collection of bow ties, and renowned for his research on wine and grapes, Dinny also enjoyed producing vinegar for fellow faculty members. To make this wine vinegar, we started with fruity French Colombard, a classic California table wine. The vinegar is then created in a 150-year-old stone vinegar house by a local artisan, one of only two in the nation that uses the Orleans method. This unique wine-to-vinegar conversion process includes months of aging in French Oak barrels. Our Dinny White Wine Vinegar is full-bodied with a crisp finish, and is a worthy partner to our award-winning UC Davis Olive Oil.
